Ingredients

Ingredients:
  • 2 pieces Mission Carb Balance low-carb tortillas
  • 2 tsp olive oil or a bit more for brushing
  • 1/2 cup very finely chopped lettuce
  • 1/4 cup finely crumbled Feta cheese
  • 10 pieces Kalamata olives finely chopped (or substitute with regular black olives)
  • 1/2 cup hummus
  • to taste Powdered sumac for sprinkling (optional, but recommended)

Equipment

  • Baking sheet
  • Oven
  • Mixing Bowl
  • Knife and cutting board

Method

Method:
  1. Step 1: Preheat the Oven - Begin by preheating your oven to 400°F (200°C). This temperature is perfect for achieving crispy tortillas.
  2. Step 2: Prepare the Tortillas - Brush both sides of the Mission Carb Balance low-carb tortillas with olive oil. Place the tortillas on a baking sheet and bake for about 8-10 minutes, or until golden and crispy.
  3. Step 3: Chop the Toppings - While the tortillas are baking, finely chop the lettuce and olives. Crumble the feta cheese if you haven’t done so already.
  4. Step 4: Assemble the Tostadas - Once the tortillas are done, spread a generous layer of hummus over each tortilla.
  5. Step 5: Add Toppings - Sprinkle the chopped lettuce, crumbled feta, and chopped olives over the hummus. Layer as much or as little as you like!
  6. Step 6: Final Touch - Finish off with a light sprinkling of powdered sumac for a tangy flavor that complements the hummus beautifully.

Notes

  • Allow the tortillas to cool completely before storing to prevent sogginess.
  • Store assembled tostadas in an airtight container in the refrigerator for up to 1 day.
  • Rewarm tortillas in the oven at 350°F (175°C) for a few minutes to crisp them up again.
