Instructions:
- Step 1: Preheat your oven to 350°F (175°C). This will allow the casserole to cook evenly and get the cheese perfectly melted.
- Step 2: In a large skillet, over medium heat, add the 1 lb of ground beef. Cook until browned, breaking it up with a spatula as it cooks. Drain any excess grease if necessary.
- Step 3: Once the beef is browned, add the chopped garlic and the white parts of the scallions. Cook for an additional 1-2 minutes until the garlic is fragrant.
- Step 4: Next, stir in the 2 cans of white beans (or your choice of beans), 1/2 cup salsa, chicken broth, chili powder, cumin, and paprika. Mix everything well and let it simmer for about 5 minutes to allow the flavors to meld.
- Step 5: In your prepared baking dish, layer half of the Doritos chips on the bottom. Pour the beef and bean mixture over the chips, spreading it evenly. Then, top with a generous layer of cheese (1.5 cups) followed by the remaining Doritos chips and the rest of the cheese.
- Step 6: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
- Step 7: Once out of the oven, let the casserole cool for a few minutes. Top with the green parts of the chopped scallions, diced tomatoes, and serve with sour cream and lime wedges on the side.
Notes
- For an extra kick, add jalapeños or diced green chilies to the beef mixture.
- Feel free to customize the beans based on what you have on hand.
