Ingredients
  

  • 1 lb ground sausage spicy or mild based on preference
  • 2 cups pancake mix good quality
  • 1.5 cups water
  • 0.5 cup real maple syrup opt for pure
  • 1 cup shredded cheddar cheese sharp for intense flavor

Method
 

  1. Start by heating a skillet over medium heat. Add the ground sausage and cook until browned, about 5-7 minutes. Drain excess grease and set aside.
  2. In a large mixing bowl, combine pancake mix and water. Stir until just combined, then add maple syrup and mix until incorporated. Fold in shredded cheddar and browned sausage.
  3. Preheat your oven to 375°F (190°C). Grease your muffin tin lightly.
  4. Spoon batter into the prepared muffin tin, filling each cup about ¾ full.
  5. Bake for about 15-18 minutes, until tops are golden brown and a toothpick comes out clean.
  6. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack. Serve warm with extra maple syrup if desired.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Freeze muffins for up to 2 months in a freezer-safe bag.
  • Reheat in the microwave for 30 seconds or in the oven until heated through.
