Ingredients
  

For the Chicken:
  • 1 pound boneless, skinless chicken breasts (cubed)
  • 1 tablespoon vegetable oil
For the Sauce:
  • ½ cup orange juice
  • ½ cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • 2 cloves garlic (minced)
  • 1 teaspoon freshly grated ginger
  • ¼ teaspoon ground black pepper

  • Sliced green onions (for garnish)
  • Sesame seeds (for garnish)

Method
 

Cooking Instructions:
  1. In a medium bowl, whisk together the orange juice, low-sodium soy sauce, brown sugar, water, cornstarch, minced garlic, grated ginger, and ground black pepper. Set this mixture aside to allow the flavors to meld.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the cubed chicken and cook until it's golden brown and cooked through, about 5-7 minutes. Be sure to stir occasionally to ensure even cooking.
  3. Once the chicken is cooked, pour the prepared sauce over the chicken in the skillet. Stir well to coat the chicken evenly. Let it simmer for about 3-5 minutes, or until the sauce thickens and becomes glossy.
  4. Serve your Mandarin Chicken over a bed of steamed rice with a side of steamed broccoli. Garnish with sliced green onions and a sprinkle of sesame seeds for that extra touch of flavor and presentation.

Notes

  • Feel free to swap chicken breasts for thighs for a richer flavor.
