  • 3 cups granulated sugar
  • 1 tsp salt
  • 5 large eggs room temperature
  • 3 cups sifted cake flour
  • 1 cup 7UP soda room temperature
  • 1 tbsp lemon extract
  • 1 cup confectioners sugar
  • 3 tbsp 7UP soda
  • 1 tsp lemon extract

Method
 

  1. Step 1: Preheat your oven to 325°F (163°C) to ensure even baking.
  2. Step 2: Grease and flour your pound cake pan to prevent sticking.
  3. Step 3: Cream together the butter and sugar in a mixing bowl until light and fluffy, about 5-7 minutes.
  4. Step 4: Add the eggs one at a time, beating well after each addition.
  5. Step 5: In a separate bowl, whisk together the sifted cake flour and salt.
  6. Step 6: Gradually add the dry ingredients to the butter mixture, alternating with 7UP soda, mixing until just combined.
  7. Step 7: Stir in the lemon extract until evenly distributed.
  8. Step 8: Pour the batter into the prepared pan and bake for 60-70 minutes or until a toothpick comes out clean.
  9. Step 9: Cool the cake in the pan for 10-15 minutes before transferring to a cooling rack.
  10. Step 10: Make the glaze by mixing confectioners sugar, 3 tbsp of 7UP, and 1 tsp of lemon extract until smooth, then drizzle over the cooled cake.
