Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter cold and cubed
  • 1 cup buttermilk
  • 1 cup cooked sausage crumbled and cooled
  • 1 cup shredded cheese Cheddar or preferred variety

Equipment

  • Mixing Bowl
  • Pastry cutter or fork
  • Baking sheet
  • Parchment paper
  • Plastic wrap or airtight container

Method

  1. Step 1: Preheat your oven to 425°F (220°C).
  2. Step 2: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.
  3. Step 3: Add the cold, cubed butter to the flour mixture. Cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Step 4: Pour in the buttermilk and stir gently until just combined.
  5. Step 5: Gently fold in the cooked sausage and shredded cheese until evenly distributed.
  6. Step 6: Turn the dough out onto a lightly floured surface. Pat down into a rectangle about 1 inch thick and cut out biscuits.
  7. Step 7: Freeze the biscuits for about 30 minutes if making ahead. Store them in a plastic wrap or airtight container.
  8. Step 8: Bake from frozen for 20-25 minutes or until golden brown.

Notes

  • Ensure your butter is very cold for the best texture.
  • Do not overwork the dough; this keeps the biscuits light and fluffy.
  • Add herbs like chives or rosemary for extra flavor.
  • Experiment with different cheese varieties for a twist.
