Ingredients

  • 1 cup butter softened
  • 1 cup peanut butter
  • 1 cup sugar
  • 1 cup brown sugar packed
  • 3 large eggs
  • 1 Tbsp vanilla extract
  • 1 cup instant nonfat dry milk
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Equipment

  • Mixing bowls
  • Measuring cups and spoons
  • Electric mixer
  • Baking sheets
  • Parchment paper
  • Cooling rack

Method

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, cream together the softened butter and peanut butter until smooth. Gradually add in the sugar and brown sugar, mixing until fluffy.
  3. Step 3: Crack in the eggs one at a time, mixing well after each addition. Pour in the vanilla extract and continue mixing until well incorporated.
  4. Step 4: In a separate bowl, whisk together the dry ingredients: instant nonfat dry milk, all-purpose flour, baking soda, and salt. Gradually add this to the wet mixture, mixing on low speed until just combined.
  5. Step 5: Using a cookie scoop or tablespoon, drop rounded balls of dough onto prepared baking sheets, spacing about 2 inches apart.
  6. Step 6: Bake in the preheated oven for 10-12 minutes, or until edges are lightly golden.
  7. Step 7: Let cookies cool on the baking sheets for 5 minutes before transferring to a cooling rack.

Notes

  • For nut-free, substitute peanut butter with sun butter or soy nut butter.
  • For dairy-free, use a dairy-free butter alternative.
  • To make egg-free, replace each egg with 1/4 cup unsweetened applesauce.
