  • 1 tablespoon gelatin (1 envelope)
  • 2 tablespoons cold water
  • 2 cups heavy cream
  • 1 cup milk of choice (I used unsweetened coconut milk)
  • 1/3 cup allulose
  • 2 teaspoons vanilla extract

Method
 

Instructions:
  1. Step 1: Bloom the Gelatin - Start by sprinkling the gelatin over the cold water in a small bowl. Let it sit for about 5 minutes to bloom.
  2. Step 2: Heat the Cream and Milk - In a medium saucepan, combine the heavy cream, milk, and allulose. Heat over medium heat, stirring until steaming but not boiling.
  3. Step 3: Incorporate the Gelatin - Remove the cream mixture from heat and add the bloomed gelatin, whisking continuously until fully dissolved.
  4. Step 4: Add Vanilla - Stir in the vanilla extract and mix well.
  5. Step 5: Pour and Chill - Pour the mixture into serving cups or molds. Cool at room temperature for 30 minutes, then refrigerate for at least 4 hours until set.

Notes

  • Ensure the gelatin is fully bloomed for the best texture.
  • Experiment with different sweeteners to suit your taste.
  • For a dairy-free version, substitute with coconut milk and cream.
