Ingredients
  

For the Buns:
  • 1 cup almond flour plus 2 tablespoons
  • 2 tablespoons coconut flour
  • 1.5 tablespoons baking powder
  • 1.5 cups low moisture mozzarella cheese
  • 0.25 cup softened cream cheese (approximately 2 ounces)
  • 3 large eggs divided

Method
 

Baking Instructions:
  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until melted.
  3. Step 3: In a separate bowl, whisk together the almond flour, coconut flour, and baking powder.
  4. Step 4: Once the cheese mixture is melted, add the three eggs (reserve one for egg wash) and mix. Stir in the dry ingredients until a dough forms.
  5. Step 5: Divide the dough into equal portions and shape into buns. Place on a baking sheet lined with parchment paper.
  6. Step 6: Beat the reserved egg and brush it over the buns.
  7. Step 7: Bake for 15-20 minutes until golden brown. Monitor to prevent over-baking.
  8. Step 8: Remove from the oven, let cool slightly, and serve warm.
