Ingredients
  

For the Slaw:
  • 2 cups lacinato kale chopped
  • 4 cups cabbage shredded
  • 1 medium carrot grated
  • 2-3 green onions sliced
  • 3 tablespoons fresh parsley or cilantro chopped
  • 1 batch Vegan Coleslaw Dressing

  1. Step 1: Prepare the Vegetables. Start by washing the lacinato kale and cabbage thoroughly. Chop the kale into bite-sized pieces, and shred the cabbage using a sharp knife or a food processor. Grate the carrot using a box grater or vegetable peeler.
  2. Step 2: Chop Fresh Herbs. Next, finely chop the fresh parsley or cilantro and slice the green onions. These herbs will not only add flavor but also brighten up the slaw visually.
  3. Step 3: Make the Vegan Coleslaw Dressing. In a separate bowl, prepare your Vegan Coleslaw Dressing. Combine your favorite vegan mayonnaise with a splash of apple cider vinegar, a dash of mustard, and a sprinkle of garlic powder for an extra kick. Whisk until well blended and creamy.
  4. Step 4: Combine the Ingredients. In a large mixing bowl, combine the chopped kale, shredded cabbage, grated carrot, green onions, and fresh herbs. Drizzle the vegan dressing over the top.
  5. Step 5: Toss and Serve. Gently toss all the ingredients together until the vegetables are evenly coated with the creamy dressing. Allow the slaw to sit for about 10-15 minutes to let the flavors meld. Serve chilled or at room temperature.

Notes

  • Massage the kale with a bit of salt to soften it before mixing.
  • Let the slaw rest for 10-15 minutes for better flavor.
