Ingredients
  

For the Cajun Chicken Alfredo:
  • 2 large boneless skinless chicken breasts
  • 2 teaspoons Cajun seasoning
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 2 cups chicken stock
  • 2 cups heavy cream
  • 16 ounces uncooked pasta fettuccine or preferred
  • 1 teaspoon kosher salt
  • 1 teaspoon minced fresh thyme
  • 1.5 cups Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 large tomatoes seeds removed and chopped
  • 2 tablespoons minced fresh parsley for garnish

Method
 

Instructions:
  1. Step 1: Season the chicken breasts with the Cajun seasoning, coating them evenly.
  2. Step 2: Set your Instant Pot to the sauté function and add olive oil. Once hot, sauté the chicken for 3-4 minutes on each side until browned but not fully cooked. Remove and set aside.
  3. Step 3: Add minced garlic to the pot and cook for about 30 seconds until fragrant.
  4. Step 4: Pour in the chicken stock and deglaze the pot by scraping up any browned bits.
  5. Step 5: Add the uncooked pasta and the partially cooked chicken to the pot, ensuring the pasta is submerged.
  6. Step 6: Close the lid and set the Instant Pot to cook on high pressure for 8 minutes. After cooking, allow for a natural release for 5 minutes, then perform a quick release.
  7. Step 7: Stir in heavy cream, kosher salt, minced thyme, and Parmesan cheese. Add butter and let it melt into the sauce.
  8. Step 8: Fold in chopped tomatoes and parsley, stir to combine, and serve!

Notes

  • Adjust the level of spice by varying the amount of Cajun seasoning.
  • Mix in other veggies like bell peppers or spinach for extra nutrition.
