  • ½ cup Butter
  • 8 cloves Garlic smashed
  • 1 sprig Fresh thyme
  • 1 sprig Fresh rosemary

  1. Step 1: Prepare the Steaks - Take the New York steaks out of the refrigerator about 30 minutes before cooking. Pat them dry with paper towels and season generously with salt and pepper on both sides.
  2. Step 2: Heat the Skillet - Place your cast iron skillet over medium-high heat. Add the olive oil and let it heat until shimmering.
  3. Step 3: Sear the Steaks - Once the skillet is hot, carefully place the steaks in the skillet. Sear them for about 4-5 minutes on one side.
  4. Step 4: Flip and Add Flavor - Flip the steaks over and immediately add the butter, smashed garlic, thyme, and rosemary to the skillet. Baste the steaks with the melted butter as you continue cooking for another 4-5 minutes for medium-rare.
  5. Step 5: Check the Temperature - Use a meat thermometer to check the internal temperature, aiming for 130°F to 135°F for medium-rare.
  6. Step 6: Rest the Steaks - Transfer the steaks to a cutting board and let them rest for at least 5-10 minutes to redistribute juices.
  7. Step 7: Serve and Enjoy - Slice against the grain and serve with the garlic and herbs from the skillet on top.
