- Step 1: Prepare the Steaks - Take the New York steaks out of the refrigerator about 30 minutes before cooking. Pat them dry with paper towels and season generously with salt and pepper on both sides.
- Step 2: Heat the Skillet - Place your cast iron skillet over medium-high heat. Add the olive oil and let it heat until shimmering.
- Step 3: Sear the Steaks - Once the skillet is hot, carefully place the steaks in the skillet. Sear them for about 4-5 minutes on one side.
- Step 4: Flip and Add Flavor - Flip the steaks over and immediately add the butter, smashed garlic, thyme, and rosemary to the skillet. Baste the steaks with the melted butter as you continue cooking for another 4-5 minutes for medium-rare.
- Step 5: Check the Temperature - Use a meat thermometer to check the internal temperature, aiming for 130°F to 135°F for medium-rare.
- Step 6: Rest the Steaks - Transfer the steaks to a cutting board and let them rest for at least 5-10 minutes to redistribute juices.
- Step 7: Serve and Enjoy - Slice against the grain and serve with the garlic and herbs from the skillet on top.
