Ingredients
  

  • 3 cups hot peppers whole
  • 1/4 cup red bell pepper or any colored pepper
  • 6 cloves garlic whole
  • 1 tablespoon coarse salt (Kosher or Sea salt)
  • 2 tablespoons vinegar (White or white balsamic)
  • 1/4 cup extra virgin olive oil
  • 1/3 cup cilantro leaves
  • 1/4 cup mint leaves
  • 1 tablespoon extra virgin olive oil (for blending)

Method
 

  1. Begin by washing the hot peppers and bell pepper thoroughly. Remove the stems but leave the seeds if you want more heat. Peel the garlic cloves.
  2. In a blender or food processor, combine the hot peppers, bell pepper, garlic, coarse salt, vinegar, and the first portion of extra virgin olive oil. Blend until smooth.
  3. Add the cilantro and mint leaves to the blender, along with the second tablespoon of olive oil. Blend again until everything is well combined and you reach your desired consistency.
  4. Taste your sauce and adjust the seasoning as needed. If you want it spicier, consider adding more hot peppers or a pinch of cayenne pepper.
  5. Transfer the Hot Pepper Sauce into a glass jar or bottle and seal tightly. Allow it to sit for at least an hour to let the flavors meld, or refrigerate it for longer storage.

Notes

  • Wear gloves when handling hot peppers to avoid irritation.
  • Store leftover sauce in the refrigerator for up to two weeks.
  • Feel free to play around with the types of peppers – jalapeños, serranos, or habaneros all work beautifully.
