Homemade Tagalongs (Peanut Butter Patties) in Steps
- Step 1: Prepare the Cookie Dough: In a mixing bowl, cream together the butter and sugar until light and fluffy. This should take about 2-3 minutes. Add in the vanilla extract and mix well.
- Step 2: Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the butter mixture, alternating with the milk, and mix until just combined. Be careful not to overmix.
- Step 3: Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This will make it easier to roll out and cut into shapes.
- Step 4: Bake the Cookies: Preheat your oven to 350°F (175°C). Roll out the chilled dough on a floured surface to about 1/4-inch thickness. Cut out circles using a cookie cutter or a glass. Place the circles on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until the edges are lightly golden. Let them cool completely.
- Step 5: Make the Peanut Butter Filling: In a mixing bowl, combine the creamy peanut butter, confectioners' sugar, salt, and vanilla extract. Mix until smooth and well combined.
- Step 6: Assemble the Cookies: Once the cookies are cooled, spread a generous amount of peanut butter filling on half of the cookies. Top with another cookie to create a sandwich. Repeat until all cookies are filled.
- Step 7: Prepare the Chocolate Coating: Melt the chocolate chips using a double boiler or microwave, stirring until smooth. If using cocoa butter, mix it in until fully incorporated.
- Step 8: Coat the Cookies: Dip each cookie sandwich into the melted chocolate, ensuring it's fully coated. Place the coated cookies on a baking sheet lined with parchment paper to set.
- Step 9: Let Them Set: Allow the chocolate to cool and harden completely. You can place the cookies in the refrigerator for quicker setting.
