Ingredients
  

  • 1 1/2 cups peanut butter
  • 1/3 cup honey
  • 1/4 cup ground flax seed
  • 1 1/4 cups rolled oats, slightly ground (oat flour works too)
  • 1/2 cup vanilla protein powder (chocolate can be used)
  • pinch salt
  • 1 tsp vanilla extract
  • 1/4 cup mini chocolate chips

Method
 

  1. Step 1: Prepare Your Pan - Start by lining a 9x9 inch baking pan with parchment paper. This will help you easily lift the bars out once they’re set.
  2. Step 2: Mix Wet Ingredients - In a large mixing bowl, combine the peanut butter and honey. Use a spatula to mix until smooth. If your peanut butter is too thick, you can microwave it for a few seconds to soften it.
  3. Step 3: Add Dry Ingredients - Next, add the ground flax seed, slightly ground rolled oats, protein powder, salt, and vanilla extract to the wet mixture. Stir until everything is well combined.
  4. Step 4: Fold in Chocolate Chips - Gently fold in the mini chocolate chips. This is where the magic happens, as they add a wonderful sweetness and texture to the bars.
  5. Step 5: Press Mixture into Pan - Pour the mixture into your prepared baking pan. Use your spatula to press it down firmly and evenly. This step is crucial for ensuring your bars hold together after they’re cut.
  6. Step 6: Chill and Set - Place the pan in the refrigerator for about 1-2 hours, allowing the bars to set and firm up.
