Ingredients

For the Truffles:
  • 1 cup natural creamy peanut butter
  • 1/4 cup 100% pure maple syrup
  • 2-3 pitted medjool dates
  • 3/4 cup dark chocolate chips
  • 2 tablespoons milk of choice

Equipment

  • Mixing Bowl
  • Microwave-safe bowl
  • Baking sheet
  • Parchment paper
  • Spoon or cookie scoop

Method

Instructions:
  1. In a mixing bowl, combine the natural creamy peanut butter, pure maple syrup, and pitted medjool dates. Use a fork or a hand mixer to blend the ingredients until smooth.
  2. Use a spoon or cookie scoop to portion out small amounts of the mixture and roll each into a ball. Place the truffles onto a baking sheet lined with parchment paper.
  3. Refrigerate the truffles for about 30 minutes to firm up.
  4. In a microwave-safe bowl, combine the dark chocolate chips and milk. Heat in the microwave in 30-second intervals, stirring until melted and smooth.
  5. Dip each truffle into the melted chocolate using a fork, ensuring they are fully coated. Allow excess chocolate to drip off before returning to the baking sheet.
  6. Chill the dipped truffles in the refrigerator for 15-20 minutes to let the chocolate set.
  7. Once hardened, enjoy your Homemade Peanut Butter Cup Truffles or store them in an airtight container in the fridge for up to a week.

Notes

  • Ensure the peanut butter is creamy for the best texture.
  • Adjust sweetness by varying the number of dates used.
  • Add chopped nuts for a crunchier texture if desired.
