  • ¾ cup Extra-virgin olive oil
  • ¼ cup White or red wine vinegar
  • 1 tablespoon Honey or substitute with maple syrup for vegan option
  • 1 unit Lemon juice freshly squeezed
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • ½ teaspoon Salt
  • to taste Freshly cracked black pepper
  • ¼ cup Grated parmesan omit for dairy-free version

Method
 

Instructions
  1. Gather all your ingredients ensuring they are fresh for vibrant flavor.
  2. In a medium-sized bowl, combine ¾ cup of extra-virgin olive oil with ¼ cup of white or red wine vinegar. Whisk together until well blended.
  3. Add 1 tablespoon of honey and the juice of one freshly squeezed lemon to the oil and vinegar mixture. Whisk again until combined.
  4. Add 1 teaspoon each of dried oregano and dried basil, and ½ teaspoon of salt. Season with freshly cracked black pepper to taste.
  5. Fold in ¼ cup of grated parmesan cheese for a rich flavor.
  6. Whisk everything together until thoroughly mixed. Pour into a glass jar, seal it, and shake well.
  7. Refrigerate for at least 30 minutes to allow flavors to meld.

Notes

  • Store in the refrigerator for up to a week; flavors deepen over time.
  • Shake before each use to recombine ingredients.
  • If the dressing thickens, whisk in a little water or olive oil to adjust consistency.
