Ingredients
  

  • 1 cup sweetener choose from: clover honey, pure maple syrup, 1/2 cup honey + 1/2 cup brown sugar, 1/2 cup pure maple syrup + 1/2 cup brown sugar, or brown sugar
  • 1/2 cup organic coconut oil or vegetable oil
  • 3 tablespoons unsalted butter or substitute more oil for a vegan version
  • 1/2 teaspoon ground cinnamon optional
  • pinch kosher salt optional, only if using unsalted nuts
  • 1 teaspoon vanilla extract optional
  • 5 cups rolled grains oats or five-grain rolled grain cereal
  • 4 cups nuts and seeds choose from: sunflower seeds, flaxseeds, sliced almonds, chopped pecans, walnuts, pepitas, cashews
  • 1 cup dried fruit options include: dried blueberries, chopped dried apricots, chopped dried mango, raisins, dried cranberries

Method
 

  1. Begin by preheating your oven to 325°F (165°C). This ensures that your granola will bake evenly and develop that perfect golden color.
  2. In a small saucepan over low heat, combine your choice of sweetener, coconut oil, and butter. Stir gently until everything is melted and combined. If using, add the ground cinnamon and vanilla extract. Remove from heat and set aside.
  3. In a large mixing bowl, combine the rolled grains, nuts, and seeds. If you're using unsalted nuts, sprinkle in a pinch of kosher salt here. Stir until everything is evenly distributed.
  4. Pour the warm sweet mixture over the dry ingredients. Using a wooden spoon or spatula, stir well until all the grains and nuts are thoroughly coated.
  5. Spread the granola mixture evenly onto the prepared baking sheet. Bake in the preheated oven for about 20-25 minutes, stirring halfway through to ensure even baking. Keep an eye on it to prevent burning; you want it to turn a nice golden brown.
  6. Once the granola is golden and fragrant, remove it from the oven and let it cool slightly. Add the dried fruit and stir to combine. The granola will continue to harden as it cools.
  7. Allow your granola to cool completely on the baking sheet. Once cooled, break it into clusters and transfer it to an airtight container for storage.

Notes

  • Store granola in an airtight container at room temperature for up to 2 weeks.
  • For longer storage, freeze granola in a freezer-safe bag for up to 3 months.
  • Press the mixture down firmly on the baking sheet for clumpier granola.
