Ingredients

For the Fish Sticks:
  • 2 fillets white fish (tilapia, cod, catfish, etc.)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 large egg
  • 2 tablespoons half and half
  • ½ cup all-purpose flour
  • ½ cup plain breadcrumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ½ cup vegetable oil for frying in pan

Equipment

  • Cutting board
  • Knife
  • Bowl
  • Shallow dish
  • Frying pan
  • Slotted spoon or spatula

Method

Steps to Make Fish Sticks:
  1. Step 1: Prepare the Fish - Start by rinsing your fish fillets under cold water. Pat them dry with a paper towel. Cut the fillets into strips, approximately 1-inch wide and 3-4 inches long.
  2. Step 2: Season the Fish - In a bowl, combine the salt and black pepper. Sprinkle the mixture over the fish strips, ensuring they are evenly coated.
  3. Step 3: Prepare the Breading Station - In a separate shallow dish, add the all-purpose flour. In another bowl, whisk together the egg and half and half until well combined. In a third dish, mix the plain breadcrumbs with garlic powder and Italian seasoning.
  4. Step 4: Bread the Fish Sticks - Dredge each fish strip in the flour, shaking off any excess. Next, dip it into the egg mixture, allowing the excess to drip off, and then coat it in the breadcrumb mixture, pressing gently to ensure it sticks well. Place the breaded fish sticks on a plate.
  5. Step 5: Heat the Oil - In a frying pan, pour in the vegetable oil and heat it over medium-high heat. You’ll know the oil is ready when it shimmers or a breadcrumb dropped into it sizzles.
  6. Step 6: Fry the Fish Sticks - Carefully place the breaded fish sticks into the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until they are golden brown and cooked through.
  7. Step 7: Drain and Serve - Once cooked, remove the fish sticks from the pan and place them on a paper towel-lined plate to drain any excess oil. Serve hot with your favorite dipping sauce!

Notes

  • For a lighter option, bake the fish sticks at 425°F (220°C) for 15-20 minutes.
  • Consider using whole wheat breadcrumbs for added fiber.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
