Ingredients
  

  • 1 3/4 cups Self-rising flour
  • 2 cups Cottage cheese or 1 to 1 1/2 cups of Greek yogurt
  • 1/2 cup Pizza sauce homemade or store-bought
  • 1 cup Shredded mozzarella cheese
  • Olive oil for spritzing or brushing

Method
 

  1. In a large mixing bowl, combine 1 3/4 cups of self-rising flour with 2 cups of cottage cheese (or 1 to 1 1/2 cups of Greek yogurt). Mix until the ingredients are well combined and form a dough. The dough should be slightly sticky but manageable. If it’s too sticky, add a bit more flour.
  2. On a floured surface, take the dough and roll it out into a rectangle about 1/4 inch thick. Ensure that the thickness is even to promote even cooking.
  3. Spread 1/2 cup of pizza sauce evenly over the rolled-out dough, leaving a small border around the edges. Sprinkle 1 cup of shredded mozzarella cheese over the sauce. Feel free to add any additional toppings you desire, like pepperoni or vegetables, at this stage.
  4. Starting from one long side, carefully roll the dough into a tight log. Make sure to roll it evenly to ensure that all fillings are secured within the roll.
  5. Using a pizza cutter or knife, slice the rolled dough into 1-inch pieces. You should have about 12-15 rolls.
  6. Preheat your air fryer to 375°F (190°C). Lightly spritz or brush the outside of each roll with olive oil, which will help achieve that crispy, golden exterior.
  7. Place the rolls in the air fryer basket in a single layer, ensuring they aren’t overcrowded. Air fry for about 8-10 minutes, or until the rolls are golden brown and crispy. Halfway through the cooking time, shake the basket to ensure even cooking.
  8. Once cooked, carefully remove the pizza rolls from the air fryer. Let them cool for a minute, then serve with additional pizza sauce for dipping. Enjoy your delicious, homemade snack!
