Ingredients
  

  • 4 cups chopped or shredded rotisserie chicken
  • 1 large red bell pepper, chopped
  • 1/2 cup sliced green onion
  • 3/4 cup chopped cilantro adjust based on taste
  • 2 avocados, chopped
  • 2 tablespoons fresh-squeezed lime juice to prevent browning
  • 1 cup feta cubes

Method
 

  1. Gather all your ingredients on the counter for a smoother process.
  2. Chop or shred the rotisserie chicken into bite-sized pieces.
  3. Chop the red bell pepper and green onions, and roughly chop the cilantro.
  4. Cut avocados in half, remove the pit, scoop into a bowl, drizzle with lime juice, and chop.
  5. In a large mixing bowl, combine the chicken, red bell pepper, green onions, cilantro, and feta. Gently fold in the avocado.
  6. Toss everything together until well combined and serve immediately.
