In a mixing bowl, combine the melted coconut oil with the peanut butter. If you're using a banana, mash it up and add it to the bowl now. Mix everything together until you have a smooth and creamy consistency.
Add your chosen sweetener to the mixture. Stir until everything is thoroughly combined.
If you’re adding mini chocolate chips, fold them into the mixture.
Pour the fudge mixture into a lined 9x5-inch loaf pan, spreading it evenly. Place the pan in the refrigerator and let it chill for at least 2 hours, or until firm.
Once the fudge is set, slice it into squares and enjoy!
