Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine spelt flour or oat flour, rolled oats, coconut sugar, baking soda, salt, and ground cinnamon (if using). Stir until well mixed.
In a separate bowl, mix almond butter, water, and vanilla extract until smooth and creamy.
Pour the wet mixture into the dry ingredients and stir until just combined. Fold in chocolate chips or raisins gently.
Using a spoon or cookie scoop, drop heaping tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
