- Step 1: Preheat Your Oven. Begin by preheating your oven to 350°F (175°C). This ensures that your bread bakes evenly and rises perfectly.
- Step 2: Prepare Your Loaf Pan. Grease a 9x5 inch loaf pan with a little coconut oil or line it with parchment paper for easy removal after baking.
- Step 3: Combine the Dry Ingredients. In a large mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and ground cinnamon.
- Step 4: Mix the Wet Ingredients. In another mixing bowl, combine the melted coconut oil, coconut sugar, unsweetened applesauce, lightly beaten eggs, and vanilla extract. Mix until well combined.
- Step 5: Add the Mashed Bananas. Fold in the mashed bananas into your wet mixture. Make sure the bananas are very ripe for the best flavor and sweetness!
- Step 6: Combine Wet and Dry Ingredients. Gently pour the wet ingredients into the bowl of dry ingredients. Stir until just combined.
- Step 7: Fold in the Blueberries. Gently fold fresh blueberries into the batter.
- Step 8: Pour into the Loaf Pan. Transfer the batter into your prepared loaf pan. Optionally, place the halved banana on top.
