  • 1.5 cups whole wheat flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
Wet Ingredients
  • 0.5 cups coconut sugar (or light brown sugar, packed)
  • 0.25 cups coconut oil (melted)
  • 0.25 cups unsweetened applesauce
  • 2 large eggs (lightly beaten, at room temperature)
  • 2 teaspoons vanilla extract
  • 3 very ripe bananas (peeled and mashed, about 1 and 1/4 cups of mashed banana)
  • 1.5 cups fresh blueberries
  • 1 banana (optional) (sliced in half lengthwise, for decoration)

Instructions
  1. Step 1: Preheat Your Oven. Begin by preheating your oven to 350°F (175°C). This ensures that your bread bakes evenly and rises perfectly.
  2. Step 2: Prepare Your Loaf Pan. Grease a 9x5 inch loaf pan with a little coconut oil or line it with parchment paper for easy removal after baking.
  3. Step 3: Combine the Dry Ingredients. In a large mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and ground cinnamon.
  4. Step 4: Mix the Wet Ingredients. In another mixing bowl, combine the melted coconut oil, coconut sugar, unsweetened applesauce, lightly beaten eggs, and vanilla extract. Mix until well combined.
  5. Step 5: Add the Mashed Bananas. Fold in the mashed bananas into your wet mixture. Make sure the bananas are very ripe for the best flavor and sweetness!
  6. Step 6: Combine Wet and Dry Ingredients. Gently pour the wet ingredients into the bowl of dry ingredients. Stir until just combined.
  7. Step 7: Fold in the Blueberries. Gently fold fresh blueberries into the batter.
  8. Step 8: Pour into the Loaf Pan. Transfer the batter into your prepared loaf pan. Optionally, place the halved banana on top.
