Ingredients
  

  • 2 medium ripe bananas mashed
  • 1/2 cup unsweetened applesauce
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 2 tablespoons oat flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup raisins

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the 2 medium ripe bananas with a fork or potato masher until smooth.
  3. Add the 1/2 cup unsweetened applesauce, 2 tablespoons honey, and 1 teaspoon vanilla extract to the mashed bananas. Mix well until fully combined.
  4. In a separate bowl, combine the 1 1/2 cups rolled oats, 2 tablespoons oat flour, 2 teaspoons cinnamon, 1/2 teaspoon baking powder, and 1/4 teaspoon salt. Stir to blend the dry ingredients well.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the 1/3 cup raisins.
  6. Using a spoon or cookie scoop, drop rounded tablespoons of the cookie dough onto a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for about 12-15 minutes, or until the edges are golden and the centers are set.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
