Directions: Griddle Cakes
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In another bowl, beat the eggs, then add the milk, melted butter, and vanilla extract. Whisk until the mixture is smooth.
- Pour the wet mixture into the dry ingredients. Gently fold them together until just combined. Be careful not to overmix; it’s okay if there are a few lumps!
- Preheat your griddle or skillet over medium heat. Grease lightly with additional melted butter.
- Pour about 1/4 cup of batter onto the griddle for each cake. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes. Flip and cook for another 2 minutes until golden brown.
- Transfer the cooked griddle cakes to a plate and keep warm. Repeat until all the batter is used. Serve with your favorite toppings like syrup, fruit, or even a dollop of whipped cream.
