Ingredients
  

For the Griddle Cakes:
  • 2 cups all-purpose flour
  • 2 1/2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 2 1/2 tablespoons unsalted butter, melted Plus extra for greasing.
  • 1 1/2 cups milk

Method
 

Directions: Griddle Cakes
  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In another bowl, beat the eggs, then add the milk, melted butter, and vanilla extract. Whisk until the mixture is smooth.
  3. Pour the wet mixture into the dry ingredients. Gently fold them together until just combined. Be careful not to overmix; it’s okay if there are a few lumps!
  4. Preheat your griddle or skillet over medium heat. Grease lightly with additional melted butter.
  5. Pour about 1/4 cup of batter onto the griddle for each cake. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes. Flip and cook for another 2 minutes until golden brown.
  6. Transfer the cooked griddle cakes to a plate and keep warm. Repeat until all the batter is used. Serve with your favorite toppings like syrup, fruit, or even a dollop of whipped cream.

Notes

  • These cakes freeze well; stack with parchment paper and store in a freezer-safe bag.
  • Customize with seasonal flavors like berries in spring or pumpkin in fall.
  • Be careful not to overmix the batter for the fluffiest results.
