  • 2 tsp olive oil for drizzling
  • 2 tsp Greek Seasoning a blend of oregano, garlic, and other spices
  • 1/2 cup cherry tomato halves
  • 1/2 cup chopped or sliced Kalamata olives substitute with black olives if preferred
  • 1/2 cup sliced Greek peperoncini
  • 3/4 cup crumbled Feta Cheese
  • Fresh-ground black pepper to taste

Method
 

Instructions
  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a mixing bowl, drizzle the chicken breasts with olive oil, then sprinkle them with Greek seasoning.
  3. Step 3: In your baking dish, lay the seasoned chicken breasts flat. Scatter the cherry tomato halves, Kalamata olives, and sliced peperoncini around the chicken.
  4. Step 4: Sprinkle the crumbled feta cheese generously over the chicken and vegetables.
  5. Step 5: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  6. Step 6: Once done, remove the dish from the oven and let it rest for a few minutes. Serve warm, garnished with fresh herbs if desired.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To reheat, place in the oven at 350°F (175°C) until warmed through.
  • You can freeze the cooked chicken bake for up to 3 months.
