Ingredients
  

For the Marinade:
  • 1.5 pounds assorted olives (kalamata, black, green, Spanish, etc.)
  • 0.75 cup good quality extra virgin olive oil
  • 0.5 preserved lemon (rind finely diced)
  • 4 cloves garlic (thinly sliced)
  • 2 teaspoons coriander seeds (lightly cracked)
  • 1 teaspoon fennel seeds (lightly cracked)
  • 1.5 teaspoons minced fresh rosemary
  • 1.5 teaspoons minced fresh thyme
  • 3 bay leaves (broken into pieces)
  • 1 dried red chili (broken into pieces, seeds removed)

Method
 

Directions:
  1. Start by draining the assorted olives. Rinse the darker olives under cold water to prevent them from discoloring the lighter varieties.
  2. In a mixing bowl, combine the good quality extra virgin olive oil, finely diced preserved lemon rind, sliced garlic, cracked coriander seeds, cracked fennel seeds, minced rosemary, minced thyme, broken bay leaves, and the dried red chili. Mix well to combine all the flavors.
  3. Add the rinsed olives to the marinade mixture, ensuring they are fully coated.
  4. Transfer the olive mixture to a jar or container. Seal it tightly and let it marinate in the refrigerator for at least 24 hours.
  5. Once marinated, your Gourmet Marinated Olives are ready to be served!

Notes

  • Store in a sealed container to keep olives submerged in oil.
  • Refrigerate; they can last for up to two weeks.
  • Top with more olive oil if they seem dry.
