Ingredients
  

For the Crust:
  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter melted
  • 2 tablespoons granulated sugar
For the Cheesecake Filling:
  • 2 packages brick-style cream cheese (8 ounces each), softened
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 4 tablespoons sour cream
  • 4 tablespoons all-purpose flour
  • 2 large eggs well beaten
  • 1 cup funfetti, colorful sprinkles (more if needed)

Method
 

Cooking Instructions:
  1. Step 1: Preheat your oven to 325°F (160°C).
  2. Step 2: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Press into the bottom of the baking pan and bake for 10 minutes.
  3. Step 3: Beat the softened cream cheese until smooth. Gradually add 1 cup of granulated sugar and mix well.
  4. Step 4: Add vanilla extract, sour cream, and flour to the cream cheese mixture and mix until incorporated.
  5. Step 5: Add the well-beaten eggs and mix on low speed until just combined.
  6. Step 6: Gently fold in the colorful funfetti sprinkles.
  7. Step 7: Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake for 30-35 minutes.
  8. Step 8: Cool at room temperature for 15 minutes, then chill in the fridge for at least 3 hours.
  9. Step 9: Slice into squares and serve with additional sprinkles if desired.

Notes

  • Store leftovers in an airtight container in the fridge for up to 5 days.
  • Feel free to use Greek yogurt instead of sour cream.
  • For a different crust, try crushed Oreos or shortbread cookies.
