- Step 1: In a large mixing bowl, combine the flour, baking powder, baking soda, and a pinch of salt. Whisk them together until evenly mixed.
- Step 2: In another bowl, whisk together the egg, melted butter (or oil), yogurt, sugar, and vanilla extract until smooth. Make sure there are no lumps.
- Step 3: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture together. Be careful not to over-mix.
- Step 4: Once the batter is combined, gently fold in the rainbow sprinkles.
- Step 5: Preheat your skillet or griddle over medium heat. Lightly grease it with oil.
- Step 6: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
- Step 7: For the optional cream cheese drizzle, beat the softened cream cheese until smooth. Gradually add the confectioners’ sugar, vanilla extract, and milk until you achieve a drizzle-able consistency.
- Step 8: Stack the pancakes on a plate, drizzle with the cream cheese frosting if desired, and add extra sprinkles on top. Serve warm.
Notes
- For gluten-free pancakes, use a 1:1 gluten-free flour blend.
- For dairy-free pancakes, substitute yogurt with a dairy-free alternative.
- To make them vegan, replace the egg with a flax egg and use plant-based yogurt.
