Ingredients
  

For the Pancakes:
  • 1 cup Flour
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • Pinch Salt
  • 1 Egg
  • 2 tablespoons Melted Butter or Neutral Tasting Oil
  • 1 cup Yogurt (Greek or regular, any fat concentration)
  • 2 tablespoons Sugar
  • 1 teaspoon Vanilla
  • Oil (for greasing the skillet as needed)
For the Optional Cream Cheese Drizzle:
  • 2 ounces Room Temperature Softened Cream Cheese (full fat, low fat, or fat-free)
  • 1/2 cup Confectioners Sugar
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Milk (any type)

Method
 

Instructions
  1. Step 1: In a large mixing bowl, combine the flour, baking powder, baking soda, and a pinch of salt. Whisk them together until evenly mixed.
  2. Step 2: In another bowl, whisk together the egg, melted butter (or oil), yogurt, sugar, and vanilla extract until smooth. Make sure there are no lumps.
  3. Step 3: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture together. Be careful not to over-mix.
  4. Step 4: Once the batter is combined, gently fold in the rainbow sprinkles.
  5. Step 5: Preheat your skillet or griddle over medium heat. Lightly grease it with oil.
  6. Step 6: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
  7. Step 7: For the optional cream cheese drizzle, beat the softened cream cheese until smooth. Gradually add the confectioners’ sugar, vanilla extract, and milk until you achieve a drizzle-able consistency.
  8. Step 8: Stack the pancakes on a plate, drizzle with the cream cheese frosting if desired, and add extra sprinkles on top. Serve warm.

Notes

  • For gluten-free pancakes, use a 1:1 gluten-free flour blend.
  • For dairy-free pancakes, substitute yogurt with a dairy-free alternative.
  • To make them vegan, replace the egg with a flax egg and use plant-based yogurt.
