  • 2 tablespoons butter
  • 4 cloves garlic minced
  • 2 sprigs fresh thyme or 1 teaspoon minced
  • 2 sprigs fresh rosemary or 1 teaspoon minced

  1. Step 1: Prepare the Steaks - Start by taking the steaks out of the refrigerator and allowing them to come to room temperature for about 30 minutes. Pat them dry with paper towels and season generously with salt and freshly ground black pepper on both sides.
  2. Step 2: Heat the Skillet - Place your cast iron skillet over medium-high heat and let it get hot.
  3. Step 3: Sear the Steaks - Once the skillet is hot, add the filet mignon steaks and sear them for about 4-5 minutes on one side.
  4. Step 4: Flip and Add Flavor - Carefully flip the steaks over, add the butter, minced garlic, thyme, and rosemary, and baste the steaks with the melted butter.
  5. Step 5: Check for Doneness - Use a meat thermometer to check the internal temperature. Aim for 120°F for rare, 130°F for medium-rare, etc.
  6. Step 6: Rest and Serve - Remove the steaks from the skillet, let them rest for at least 5 minutes, then slice against the grain and serve immediately.

Notes

  • For best results, use a meat thermometer to prevent overcooking.
  • Let the steak rest after cooking for juicier meat.
  • Feel free to swap fresh herbs for dried if needed.
