Ingredients
  

  • 1 pound lean ground turkey
  • 1 cup corn kernels (frozen, thawed)
  • 1 cup salsa (chunky)
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon kosher or sea salt
  • 15 ounces black beans (canned, drained)
  • 2 cups cheddar cheese (shredded)

Method
 

  1. In a large skillet over medium heat, add the lean ground turkey. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  2. Once the turkey is cooked through, stir in the chili powder, cumin, black pepper, and salt. Mix well and let the spices bloom for about 1 minute.
  3. Add the thawed corn, chunky salsa, and drained black beans to the skillet. Stir everything until evenly combined and heated through, about 3-4 minutes.
  4. Preheat your oven to 350°F (175°C). Transfer the turkey mixture into an oven-safe baking dish and spread it evenly.
  5. Sprinkle the shredded cheddar cheese generously over the top of the mixture, ensuring every inch is covered.
  6. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it cool for a few minutes. Serve warm with tortilla chips, fresh veggies, or your favorite dippables. Enjoy the fiesta of flavors!
