In a mixing bowl, combine 3/4 cup almond milk, 1 teaspoon granulated sugar, 2 tablespoons cornstarch, 1 1/4 teaspoons vanilla extract, and 1/2 teaspoon ground cinnamon. Whisk until smooth.
Take your choice of 4 slices thick bread. Lightly toast if desired.
Dip each slice of bread into the custard mixture, coating both sides. Soak for 1-2 minutes on each side.
Heat a frying pan or griddle over medium heat. Add unsalted butter to coat the surface.
Place the soaked bread slices onto the hot pan. Cook for about 3-4 minutes on each side until golden brown.
Remove from the pan and serve immediately, drizzled with maple syrup and topped with fresh fruit.
