Cooking Instructions:
- In a large skillet over medium-high heat, add the olive oil. Allow it to heat for a minute until shimmering.
- Add the cubed chicken thighs to the skillet. Sauté for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
- In a mixing bowl, combine the water, low-sodium soy sauce, honey, light brown sugar, minced garlic, and ground ginger. If using, add the pineapple juice for extra flavor. Whisk until well combined.
- Pour the sauce mixture over the cooked chicken in the skillet. Stir well to coat the chicken evenly.
- In a separate small bowl, mix the cornstarch with cold water. Once the chicken is coated in the sauce, add the cornstarch mixture to the skillet. Stir continuously for 2-3 minutes until the sauce thickens and becomes glossy.
- Once the sauce has thickened, remove the skillet from heat. Serve your Easy Teriyaki Chicken over rice or alongside steamed vegetables. Enjoy!
Notes
- Prepare the sauce ahead of time and store in the fridge for up to a week.
- Experiment with different sweeteners or add sesame seeds for a twist.
- This dish can be easily customized with extra vegetables like bell peppers or broccoli.
