Ingredients
  

For the Chicken:
  • 1 tablespoon olive oil
  • 4-5 pieces boneless, skinless chicken thighs cubed
For the Sauce:
  • 1 cup water
  • ½ cup low-sodium soy sauce or tamari sauce
  • 2 tablespoons honey
  • 1 tablespoon pineapple juice optional
  • ½ cup packed light brown sugar
  • 1 teaspoon minced garlic
  • ½ teaspoon ground ginger
  • 2 tablespoons cornstarch mixed with ¼ cup cold water

Method
 

Cooking Instructions:
  1. In a large skillet over medium-high heat, add the olive oil. Allow it to heat for a minute until shimmering.
  2. Add the cubed chicken thighs to the skillet. Sauté for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  3. In a mixing bowl, combine the water, low-sodium soy sauce, honey, light brown sugar, minced garlic, and ground ginger. If using, add the pineapple juice for extra flavor. Whisk until well combined.
  4. Pour the sauce mixture over the cooked chicken in the skillet. Stir well to coat the chicken evenly.
  5. In a separate small bowl, mix the cornstarch with cold water. Once the chicken is coated in the sauce, add the cornstarch mixture to the skillet. Stir continuously for 2-3 minutes until the sauce thickens and becomes glossy.
  6. Once the sauce has thickened, remove the skillet from heat. Serve your Easy Teriyaki Chicken over rice or alongside steamed vegetables. Enjoy!

  • Prepare the sauce ahead of time and store in the fridge for up to a week.
  • Experiment with different sweeteners or add sesame seeds for a twist.
