Easy Pesto Sauce

Ingredients
  

  • 5 teaspoons pine nuts toasted
  • 2 cups fresh basil
  • 3 cloves garlic roughly chopped
  • 1 tablespoon fresh lemon juice from one medium lemon
  • ¾ cup Parmesan cheese grated
  • Kosher salt and black pepper to taste
  • ¾ cup extra-virgin olive oil

Method
 

  1. Start by toasting the pine nuts in a dry skillet over medium heat. Stir them frequently for about 3-5 minutes until they are golden brown and fragrant. Be careful not to burn them!
  2. In your food processor, combine the toasted pine nuts, fresh basil, chopped garlic, lemon juice, and grated Parmesan cheese. Season with a pinch of kosher salt and black pepper.
  3. With the food processor running, slowly drizzle in the extra-virgin olive oil. Blend until the mixture is smooth and creamy. You can adjust the texture by adding more olive oil if you prefer a thinner sauce.
  4. Stop the processor and taste your pesto. Adjust the seasoning with more salt and pepper if needed. You can also add more lemon juice for extra brightness.
  5. Transfer your Easy Pesto Sauce to a storage container. If you’re not using it right away, drizzle a little olive oil on top to prevent browning.

Notes

  • Store in an airtight container in the refrigerator for up to one week.
  • Freeze pesto in ice cube trays for longer storage; transfer to a zip-top bag and store for up to three months.
  • For a vegan version, omit Parmesan cheese or replace it with nutritional yeast.
