Ingredients
  

  • 1/2 cup unsalted butter (softened)
  • 6 tablespoons unsalted butter (softened)
  • 3/4 cup brown sugar (packed)
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt (optional)
  • 3 cups quick oats or old-fashioned oats
  • 1 cup raisins

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the unsalted butter and sugars until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add to the wet ingredients.
  5. Fold in the oats and raisins until evenly distributed.
  6. Scoop rounded balls of dough onto a lined baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes.
  7. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For softer cookies, bake for a shorter time.
  • Chill the dough for 30 minutes if your cookies spread too much.
  • Store in an airtight container at room temperature for up to one week.
