Ingredients

For the Wings:
  • 2 pounds chicken wings (mix of drumettes and flats, patted dry and chilled)
  • 2 tablespoons salted butter
  • 2 tablespoons Frank's Red Hot Wings Sauce
  • Celery and blue cheese dressing (for serving, optional)

Equipment

  • Deep Fryer or Large Pot
  • Slotted spoon
  • Paper towels
  • Mixing Bowl

Method

Preparation Steps:
  1. Begin by patting the chicken wings dry with paper towels. This is crucial for achieving that crispy texture we all love. Place them in the refrigerator to chill for about 30 minutes.
  2. In a deep fryer or large pot, heat about 2-3 inches of canola or vegetable oil to 375°F (190°C). Use a thermometer to ensure the right temperature for frying.
  3. Carefully add the chicken wings to the hot oil in batches to avoid overcrowding. Fry for about 8-10 minutes until they are golden brown and cooked through. Use the slotted spoon to remove the wings and place them on a plate lined with paper towels to drain excess oil.
  4. In a small saucepan over low heat, melt the salted butter. Once melted, remove it from heat and stir in the Frank's Red Hot Wings Sauce until well combined.
  5. In a mixing bowl, toss the fried wings with the buffalo sauce until they are fully coated. Make sure every wing is generously covered in that spicy goodness.
  6. Serve your buffalo wings hot with celery sticks and blue cheese dressing on the side for dipping. They are perfect for sharing or devouring all on your own!

Notes

  • Pat dry thoroughly to achieve maximum crispiness.
  • Monitor the oil temperature to avoid burning or greasiness.
  • Chill the wings before frying for a crunchier texture.
  • Experiment with spices in the sauce for a unique twist.
