Ingredients
  

For the Divinity:
  • 2 large egg whites
  • 3 cups sugar
  • 1 cup water
  • 1 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans or whole pecans for decoration

Method
 

Instructions:
  1. Step 1: Prepare the Egg Whites - Separate the egg whites and allow them to come to room temperature for about 30 minutes.
  2. Step 2: Cook the Sugar Syrup - Combine sugar, water, and corn syrup in a saucepan. Stir until dissolved, then boil until it reaches 250°F.
  3. Step 3: Whip the Egg Whites - Whip egg whites on medium speed until frothy, then increase speed to high until soft peaks form.
  4. Step 4: Combine Syrup and Egg Whites - Slowly pour the hot syrup into the whipped egg whites while mixing on low, then beat until thick and glossy.
  5. Step 5: Add Flavor and Nuts - Fold in vanilla extract and chopped pecans until evenly distributed.
  6. Step 6: Shape the Divinity - Drop spoonfuls onto a parchment-lined baking sheet and allow to cool until firm.

Notes

  • Store in an airtight container at room temperature for up to two weeks.
  • In humid conditions, refrigerate to maintain texture.
  • Divinity can be frozen for up to three months if well-wrapped.
