Crispy Vegetarian Burritos

These Crispy Vegetarian Burritos are packed with flavor! A perfect blend of black beans, corn, and spices in a warm, crispy tortilla.

Ingredients
  

For the Filling:
  • 15 oz black beans canned, rinsed
  • 1/2 cup corn fresh, frozen, or canned
  • 1/2 unit bell pepper chopped
  • 1/2 unit onion chopped
  • 1/4 cup cilantro chopped
  • 1 tablespoon butter or oil for sautéing
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 unit lime juiced
  • 1.5 cups mozzarella or Mexican blend shredded cheese
  • 2 cups cooked rice optional
  • 8 medium flour tortillas
  • 1 tablespoon oil or cooking spray for frying

Method
 

Preparation Steps:
  1. In a large skillet, heat the butter or oil over medium heat. Add the chopped onions and bell pepper, and sauté until they are soft and translucent, about 5 minutes. Stir in the corn and cook for an additional 2 minutes.
  2. Add the black beans, cilantro, lime juice, and all the spices (paprika, garlic powder, onion powder, cumin, salt, and black pepper) to the skillet. Stir well to combine and cook for another 2-3 minutes, allowing the flavors to meld.
  3. Remove the skillet from heat. If using, mix in the cooked rice and 1 cup of shredded cheese until everything is evenly coated.
  4. Place a tortilla on a flat surface. Spoon about 1/2 cup of the filling mixture onto the center of the tortilla, then sprinkle with a little additional cheese. Fold in the sides and roll it up tightly. Repeat with remaining tortillas.
  5. In the same skillet, add a bit of oil or cooking spray to coat the bottom. Once hot, place the burritos seam-side down in the skillet. Cook for 3-4 minutes until golden brown, then carefully flip and cook the other side for another 3-4 minutes.
  6. Once crispy and golden, remove the burritos from the skillet and let them cool slightly. Slice in half and serve with your favorite dipping sauces or toppings!

Notes

  • For a spicy kick, add diced jalapeños to the filling.
  • Feel free to incorporate seasonal veggies like zucchini or spinach.
  • Wrap burritos tightly in foil for freezer storage.
