Ingredients
  

For the Salmon:
  • 4 fillets salmon thin or larger
  • 15 ml oil (for sautéing)
  • 2 shallots or half a brown onion, finely chopped
  • 2 cloves garlic crushed
  • 180-200 grams baby tomatoes halved
  • 4-6 sun-dried tomatoes in oil, finely chopped
  • 250 ml vegetable or chicken stock
  • 80 grams baby spinach
  • 125 grams crème fraîche or sour cream
  • 30 ml lemon juice of 1 lemon

Method
 

Cooking Steps:
  1. Step 1: Prepare the Ingredients - Gather all your ingredients. Finely chop the shallots (or onion) and garlic, halve the baby tomatoes, and chop the sun-dried tomatoes.
  2. Step 2: Sauté the Aromatics - In a large frying pan, heat the oil over medium heat. Add the chopped shallots and garlic, sautéing for 2-3 minutes until translucent.
  3. Step 3: Add Tomatoes and Stock - Add the halved baby tomatoes and chopped sun-dried tomatoes. Cook for another 3-4 minutes, then pour in the stock and simmer.
  4. Step 4: Cook the Salmon - Push the tomato mixture aside and add the salmon fillets. Cook for 4-5 minutes on one side, flip, and cook for an additional 3-4 minutes.
  5. Step 5: Add Spinach and Cream - Add spinach and crème fraîche or sour cream. Stir gently, allowing spinach to wilt and cream to meld. Squeeze in lemon juice.
  6. Step 6: Serve and Enjoy - Plate the salmon and spoon the creamy sauce over the top. Serve immediately.
