  • 1/4 cup butter
  • 2 cloves garlic minced
  • 1 tablespoon flour
  • 1/2 cup chicken broth
  • 1 cup heavy cream or half and half
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 cup spinach chopped

Method
 

  1. Step 1: Prepare the Chicken. Start by seasoning the thinly sliced chicken breasts with salt and pepper on both sides.
  2. Step 2: Sauté the Chicken. Heat olive oil over medium-high heat in a large skillet. Cook the seasoned chicken for about 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.
  3. Step 3: Cook the Mushrooms. In the same skillet, add butter and once melted, sauté the sliced mushrooms for about 5 minutes. Add minced garlic and cook for an additional minute.
  4. Step 4: Make the Creamy Sauce. Sprinkle flour over the mushrooms and stir. Gradually add chicken broth and whisk until smooth. Pour in heavy cream and let it simmer until thickened.
  5. Step 5: Add Cheese and Seasoning. Stir in Parmesan cheese, garlic powder, pepper, and salt, cooking until the cheese is melted and the sauce is creamy.
  6. Step 6: Combine and Finish. Return the chicken to the skillet along with chopped spinach and cook for another 2-3 minutes until spinach wilts and everything is heated through.
