Cooking Instructions:
- Step 1: Preheat your oven to 400°F (200°C). On a baking sheet, toss the halved crimini mushrooms with olive oil, balsamic vinegar, and minced garlic. Season with salt and black pepper. Spread evenly on the baking sheet and roast for about 20 minutes.
- Step 2: While the mushrooms are roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.
- Step 3: In a large skillet, combine the cooked pasta with the roasted mushrooms. Toss gently over medium heat, then add the chopped spinach and cook until wilted, about 2-3 minutes.
- Step 4: Crumble the goat cheese over the mixture and stir gently until melted. If too thick, add reserved pasta water to achieve desired creaminess. Adjust seasoning with salt and pepper.
- Step 5: Remove from heat, stir in the freshly chopped basil, give it a gentle toss, and serve!
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Reheat with a splash of water or broth to loosen the sauce.
