Cooking Instructions:
- Start by patting the chicken breasts dry with paper towels. This helps to achieve a nice sear. Season both sides generously with salt and freshly ground black pepper.
- In a large skillet, heat 1 1/2 tablespoons of olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add 1 tablespoon of butter and reduce the heat to medium. Add the minced garlic and sauté for about 30 seconds, or until fragrant. Be careful not to burn the garlic!
- Sprinkle the flour over the garlic and stir to combine, cooking for another minute. Gradually whisk in 1 cup of milk, stirring constantly to prevent lumps. Bring the mixture to a gentle simmer.
- Once the sauce starts to thicken, add the diced cream cheese, minced thyme, and minced rosemary. Stir until the cream cheese is fully melted and incorporated into the sauce. Season with additional salt and pepper to taste.
- Add the seared chicken back into the skillet, spooning the sauce over the top. Let it simmer for a few minutes to heat through and allow the flavors to meld.
