From Start to Finish: Cream Cheese Lemon Bars
  1. Step 1: Prepare the Crust - Preheat your oven to 350°F (175°C). In a mixing bowl, combine 2 cups of all-purpose flour, 1/2 cup of granulated sugar, and 1/4 teaspoon of salt. Add in the cold butter cubes and mix until the mixture resembles coarse crumbs.
  2. Step 2: Bake the Crust - Press the crumb mixture evenly into the bottom of your prepared 9x13 inch baking dish. Bake it in the preheated oven for about 15-20 minutes, or until lightly golden. Allow it to cool slightly.
  3. Step 3: Make the Filling - In a large mixing bowl, beat the softened cream cheese with 2 cups of granulated sugar until smooth. Add in 3 tablespoons of all-purpose flour, 5 tablespoons of powdered sugar, 3/4 cup of fresh-squeezed lemon juice, 6 large eggs, and 1 1/2 teaspoons of vanilla extract. Whisk until fully combined and smooth.
  4. Step 4: Combine and Bake Again - Pour the lemon filling over the cooled crust, spreading it evenly. Return the dish to the oven and bake for an additional 25-30 minutes, or until set and slightly golden around the edges.
  5. Step 5: Cool and Serve - Let the bars cool in the pan on a wire rack. Refrigerate for at least 2 hours before serving. Dust with powdered sugar and cut into squares.
