  • 2 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 tablespoon sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 cups buttermilk
  • 2 large eggs
  • 4 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup sweetened coconut flakes divided
  • 1 tablespoon lime zest
  • 2 tablespoons lime juice

Method
 

  1. Start by preheating your waffle iron according to the manufacturer's instructions.
  2. In a large mixing bowl, whisk together the all-purpose flour, kosher salt, sugar, baking powder, and baking soda.
  3. In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until well combined.
  4. Pour the wet ingredients into the bowl of dry ingredients. Gently mix until just combined.
  5. Fold in 3/4 cup of the sweetened coconut flakes, lime zest, and lime juice.
  6. Lightly grease the preheated waffle iron and pour the recommended amount of batter onto the hot surface. Cook according to your waffle iron's instructions.
  7. Carefully remove the waffles from the iron and place them on a wire rack. Top with remaining coconut flakes, fresh fruit, or maple syrup.

Notes

  • These waffles are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
  • To reheat, pop them in a toaster or oven to regain crispiness.
  • For larger batches, freeze waffles in a single layer, then transfer to a freezer bag for up to 2 months.
