  • 6 tablespoons unsalted butter melted
  • 1 cup light brown sugar
  • 8 rings pineapple canned or fresh
  • 1 Maraschino cherries
  • 1 cup all-purpose flour sifted
  • 1 teaspoon baking powder
  • 1/4 teaspoon Kosher salt
  • 1/2 cup unsalted butter softened
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup pineapple juice
  • 1 tablespoon vanilla extract
  • 1/2 cup whole milk

Equipment

  • 9-inch round cake pan
  • Mixing bowls
  • Electric mixer or whisk
  • Rubber spatula
  • Measuring cups and spoons
  • Cooling rack

Method

  1. Step 1: Prepare the Pan - Preheat your oven to 350°F (175°C). In your 9-inch round cake pan, pour the melted butter and sprinkle the brown sugar evenly over it.
  2. Step 2: Arrange the Pineapple and Cherries - Place the pineapple rings on top of the brown sugar mixture, arranging them evenly. Place a Maraschino cherry in the center of each pineapple ring.
  3. Step 3: Mix the Dry Ingredients - In a bowl, sift together the all-purpose flour, baking powder, and Kosher salt. Set aside.
  4. Step 4: Cream the Butter and Sugar - In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  5. Step 5: Add the Eggs and Flavorings - Beat in the eggs, one at a time, then add in the pineapple juice, vanilla extract, and whole milk, mixing until combined.
  6. Step 6: Combine the Mixtures - Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Step 7: Pour the Batter - Gently pour the batter over the arranged pineapple and cherries in the cake pan.
  8. Step 8: Bake - Bake in the preheated oven for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  9. Step 9: Cool and Flip - Let the cake cool in the pan for about 10 minutes, then carefully invert onto a serving plate.
