How to Prepare:
  1. Step 1: Create the Marinade - In a large mixing bowl, combine the cool water, freshly squeezed orange juice, brown sugar, ground coriander, salt, allspice, ginger, cumin, cinnamon, and turmeric. Whisk until the brown sugar is fully dissolved and all the spices are well incorporated.
  2. Step 2: Prepare the Hens - Rinse the Cornish game hens under cold running water and pat them dry with paper towels. This helps to ensure crispy skin when roasting.
  3. Step 3: Marinate the Hens - Place the hens in the marinade, ensuring they are fully submerged. If necessary, use a plate to weigh them down. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or overnight for maximum flavor.
  4. Step 4: Preheat the Oven - When you're ready to cook, preheat your oven to 375°F (190°C). This temperature allows for even roasting while keeping the meat juicy.
