Ingredients
  

For the Marinade:
  • 1 cup orange (1/2 juiced, 1/2 sliced)
  • 1 cup lemon (1/2 juiced, 1/2 sliced)
  • 1 cup lime (1/2 juiced, 1/2 sliced)
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon minced fresh rosemary
  • 2 teaspoons fresh thyme leaves
  • to taste Kosher salt
  • to taste pepper
For the Chicken:
  • 4 bone-in, skin-on chicken thighs

Method
 

  1. Preheat your oven to 425°F (220°C). A hot oven is key to achieving crispy skin and perfectly cooked chicken.
  2. In a mixing bowl, whisk together the orange juice, lemon juice, lime juice, and extra virgin olive oil. Add the minced rosemary, thyme leaves, salt, and pepper.
  3. Place the chicken thighs in the marinade. Make sure they are well-coated, then let them marinate for at least 30 minutes.
  4. On a baking sheet, arrange the marinated chicken thighs, skin side up. Scatter the sliced orange, lemon, and lime around the chicken.
  5. Roast the chicken in the preheated oven for 35-45 minutes, or until the skin is golden brown and crispy and the internal temperature reaches 165°F (74°C).
  6. Once cooked, remove the chicken from the oven and let it rest for about 5-10 minutes before serving.
