Ingredients
  

  • 1 can cannellini beans 15 ounces, drained and rinsed
  • 1 clove garlic minced
  • 1/4 cup fresh cilantro packed
  • 1 teaspoon lime zest
  • 1 tablespoon lime juice freshly squeezed
  • 1/3 cup olive oil plus more as needed
  • Salt and pepper to taste

Method
 

  1. Start by draining and rinsing the cannellini beans.
  2. In your food processor, add the rinsed cannellini beans, minced garlic, fresh cilantro, lime zest, lime juice, and olive oil.
  3. Pulse the mixture until it starts to combine, then blend continuously until creamy. Scrape down the sides with a spatula as needed.
  4. If the hummus is too thick, slowly add more olive oil, one tablespoon at a time, blending after each addition.
  5. Add salt and pepper to taste and blend again to combine.
  6. Transfer the hummus to a serving bowl, drizzle with extra olive oil, and garnish with additional cilantro if desired.
  7. Serve with pita chips, fresh veggies, or spread on sandwiches.

Notes

  • This hummus can be stored in an airtight container in the refrigerator for up to a week.
  • If it thickens during storage, stir in olive oil or water to restore creaminess.
  • Hummus freezes well; store it in small portions for up to three months.
