Start by draining and rinsing the cannellini beans.
In your food processor, add the rinsed cannellini beans, minced garlic, fresh cilantro, lime zest, lime juice, and olive oil.
Pulse the mixture until it starts to combine, then blend continuously until creamy. Scrape down the sides with a spatula as needed.
If the hummus is too thick, slowly add more olive oil, one tablespoon at a time, blending after each addition.
Add salt and pepper to taste and blend again to combine.
Transfer the hummus to a serving bowl, drizzle with extra olive oil, and garnish with additional cilantro if desired.
Serve with pita chips, fresh veggies, or spread on sandwiches.
