Start by rinsing 1 cup of long-grain rice under cold water until the water runs clear, then drain well.
In a medium pot, heat 2 tablespoons of oil over medium heat. Add 1 minced garlic clove and sauté for about 30 seconds.
Add the rinsed rice to the pot, stirring to coat in the oil and garlic. Sauté for 2-3 minutes.
Pour in 1 ½ cups of filtered water and add 1 teaspoon of salt. Stir and bring to a boil.
Once boiling, reduce heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is tender.
Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in lime zest, lime juice, and cilantro.
