Cilantro Lime Rice Recipe

Ingredients
  

  • 2 tablespoons Coconut Oil or Extra Virgin Olive Oil for rich flavor
  • 1 cup Long Grain Rice jasmine or basmati, rinsed
  • 1 clove Garlic minced
  • 1.5 cups Filtered Water
  • 1 teaspoon Fine Sea Salt adjust to taste
  • 1 each Lime Zest
  • 1 tablespoon Lime Juice fresh, adjust to taste
  • 1/2 cup Cilantro finely chopped

Equipment

  • Medium pot
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Microplane Zester

Method
 

  1. Start by rinsing 1 cup of long-grain rice under cold water until the water runs clear, then drain well.
  2. In a medium pot, heat 2 tablespoons of oil over medium heat. Add 1 minced garlic clove and sauté for about 30 seconds.
  3. Add the rinsed rice to the pot, stirring to coat in the oil and garlic. Sauté for 2-3 minutes.
  4. Pour in 1 ½ cups of filtered water and add 1 teaspoon of salt. Stir and bring to a boil.
  5. Once boiling, reduce heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is tender.
  6. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in lime zest, lime juice, and cilantro.

Notes

  • Mix in sautéed bell peppers or peas for added texture.
  • Add cayenne pepper for a spicy kick.
  • Store in an airtight container in the refrigerator for up to 4 days.
